Azienda Agricola Villa Ruggeri's chickpea pasta is made exclusively with stone-ground flour from their own chickpeas—naturally rich in protein and gluten-free. It’s crafted by hand using bronze dies and dried slowly at low temperatures (around 38°C) to preserve all its nutritional properties.

A new creation from the organic farm Villa Ruggeri, their rosemary chickpea pasta blends the traditional dough with a touch of their organic rosemary powder, giving it a particularly aromatic and flavourful taste.

More about Villa Ruggeri: The farm is run by Stefano, Iride, and Giovanni, and together with their family they cultivate ancient varieties of grains and legumes, as well as saffron and hazelnuts—all certified organic. From their grains and legumes, they produce pasta in various shapes and flours. Their twenty-four hectares lie on the hills at the foot of Mount Terminillo, straddling Lazio and Umbria, surrounded by oak and hornbeam forests. In Italy, you can also find them at special, organic farmers markets, such as Firenze's Santo Spirito monthly market.
